The Shepherd’s Fold – Introductions part 2

 

Joseph goes by many titles around here, Honey, Daddy, and Boss among them

He’s the one who does most of the farm work, and when he’s not driving a John Deere tractor (or tinkering with one), you can usually find him feeding or bedding critters, working the bees, or making repairs on something around the farm. He’s also the one who does the Dover farmers market on Wednesdays, and runs most of the delivery routes. Joseph grew up on this farm. His family were Amish when he was young, though most of them have since jumped the fence, so he learned how to do things the hard way, and was never afraid of hard work.

Joseph’s idea of fun is driving 500 miles to pick up an antique tractor for peanuts. He’s got a small collection. Of course, they are all green   People know he likes his tractors, they even keep an eye out for JD things to give to him, oh, and bee stuff too.

You see, Joseph loves his bees. I had 2 hives when we got married. He got hooked, now we have about 60! He served as the treasurer for the Tri-county Beekeepers Association for several years, as well as the Apiary Inspector for Wayne and Holmes counties. And they loved him! Even though he has “retired”, beekeepers still call him for advice.

He has an aptitude for math, and when his barn was burned down by an arsonist years ago, he designed the new one himself. As far as we know it’s the only one in Holmes county without beams in the center, allowing more efficient use of space, and more room for hay! He’s one of those guys who can do just about anything, and do it well.

Joseph has a quirky sense of humor, and an ornery streak a mile long, and though he’d never admit it, he’s also got a heart of gold. His favorite colors are Royal Blue, and John Deere Green. He’ll eat mashed potatoes with any meal, and would have fried eggs for breakfast every day if I’d let him, but he’s not afraid to try something new either. He enjoys coaxing someone into trying blue potatoes or pink salt for the first time.

All in all, he’s a great guy who can be a lot of fun, and I hope all of you have a chance to meet him when he’s down there

 

Mullet Apiaries

 

Mullet Apiaries – It was good to have the rain this week. Now we hope that the fall flow (from things like ironweed, Joe-pye weed and those pretty little asters) will be a good one for the bees. That produces the honey that they will be living on this winter. As the temperatures moderate, greens will come back for a brief time. Here’s a recipe for a simple dressing: 1/4 c. white wine vinegar, 1/4 c. honey, 2 T. chopped fresh basil or mint, 1 T. minced onion, a little salt and pepper if you like. Combine, muddling the herbs a bit in the liquid. Mix well. As always, thank you for your business!

Good morning everyone,
Summer is racing by and there doesn’t seem to be enough hours in each day to get everything done.
We still have our nut butters available at Local Bounty and encourage you to stop by the store to get not only our peanut butter, almond butter, cashew butter, and smokey almond butter, but the store has fresh summer produce available.
I’ve included a recipe for Crunchy Peanut Butter Apple Dip: 1 8 oz. carton reduced fat cream cheese,
1 cup creamy peanut butter, 1/4 cup skim milk, 1T. brown sugar, 1t. vanilla, and 1/2 cup unsalted peanuts. Blend the first 5 ingredients then add in the peanuts. Serve with apple slices. Refrigerate leftovers. Enjoy!

Flying Pig Farm

We now have grass fed beef! It’s in the right hand side of Young Farm’s freezer. Our beef has no growth hormones, steroids or antibiotics. This beef is Brown Swiss. It’s naturally lean like Longhorn (95%-97%) so it may have less fat and cholesterol. It can be higher in CLA which may lower the risk of cancer. It may also contain more Omega 3 and be higher in antioxidant vitamins (B & E).

Hooray for the rain!  Chickens love it!

We will have fresh eggs, tomatoes, garlic, and some beets at the market this week.

A word about fresh eggs:  Yes, you can keep them in a bowl on your kitchen counter, if you are using them every day.  The rule of thumb is that one day on your counter is the same in egg time as one week in your refrigerator.  So, if you have kept an egg on the counter all week, you should use it for hard boiling or baking.  Break it into a cup before you toss it into the cake mix.  If it smells good, then it’s still OK to bake with.  Why do recipes say to use room temperature eggs?  If the eggs are cold, it will make a difference in the way the shortening mixes in, and may also change the baking time on your recipe.

 

In case you were wondering, the eggs we bring to market are always kept refrigerated after we wash them and put them in boxes.

Epic Delights Bakery

 

This week we will be stocking our shelves with homemade white bread, zucchini bread, triple berry cheesecake, and vanilla cheesecake. Incase you have not bought any of our bread in the past couple of weeks and have not noticed, we are now pre slicing our bread for your convince. All our cheesecake is sold per piece at the store but we would like to make our customers aware that we do take orders for larger quantities and same goes for our breads, pies, cupcakes, or any other items we may have.
