Chef David Cook’s Chicken Thigh Burritos with Fatty &Skinny Pineapple Blackbean Salsa

1 pack chicken thighs, boneless and skinless

3 TBL lime juice

1 TBL garlic, chopped

2 TBL cilantro

2 TBL say sauce

1 TBL balsamic

1/2 TBL chipotle powder

Fatty & Skinny Brand Hot Sauce to taste

2 TBL vegetable oil

1/2 TB:L cumin

fresh cracked pepper and sea salt to taste

Fatty & Skinny Pineapple Blackbean Salsa

Toss and marinate for 5 hours.  Place thighs on a hot charcoal or gas powered grill for 4 minutes on each side.  Remove thighs from the grill into a stainless steel bowl.  Toss 2 TBL of Fatty & Skinny Hot Sauce. Assemble thighs on a tortilla.  Top with Fatty & Skinny Pineapple Blackbean Salsa.

 

Keene Creek Farm

We made a run to the butcher shop last week to pick up more pork products – including beer brats, marinated loin chops and bacon. Our selection is at its peak right now and we are ready to help feed you and yours. There are now two calves on the farm – both heifers we’ve named Lizzie and Lila. Lila’s mother was a first time momma and wasn’t interested in caring for her calf at all. Rowdi tried every trick he knew to help the two along, but the momma was too obstinate. Needless to say, we now have a bottle calf (the kids are thrilled about this as they can climb in her stall at the barn and play with her). Her momma is out in the pasture again and Lila will join her when she’s a little bigger.

 

Young Farms

Young Farms will have beef in-stock in about two weeks! We will keep you posted next week on an expected delivery date. Thank you for your continued support!

Flying Pig Farm

This week we added a select amount of grass fed beef cuts to the freezer to sell. There are a couple of cuts for the grill, some roasts and marrow bones for broth. For those of you that have asked, this is your chance! This will be a select offer that won’t come around to often until we butcher again. The good news is…with a little more beef sold we’ll be purchasing another calf to raise. 🙂

 

Bob’s Pickle Patch/ Verda’s Hens

The hens are happy, even in the rain, so there are lots of eggs for you.  We will also bring in sourdough bread this week.
