Huck’s Tavern coming to Roscoe Village
Excitement is already building for a new business in Roscoe Village. Huck’s Tavern will be opening in the former Uncorked building, hopefully by the holiday season.
“We gutted the inside and are doing so much work to it,” said Stacy Drennen, who is opening the tavern, with her husband, Jeff. “It might be hard to get some of the materials we need, but we are hoping to be open by the holiday season. I’m hoping by then some of the restriction will be lifted, too.”
Stacy said opening a place like this has been something she and Jeff have talked about for years. “It was always a something, some day, maybe kind of thing, but then a chance presented itself and here we are.” She said they have a group of friends that they like to go out with, and they had talked about having a place where people could sit and have a drink and socialize. “We wanted some place that was friendly and close to home.”
The tavern is named after their chocolate lab that passed away a few years ago. “Huck was a one of a kind dog – very special. I thought this would be a cool way to honor his memory.”
To keep honoring family dogs, the menu at the tavern will feature gourmet hot dogs. “I’ve asked family and friends to pick toppings for a hot dog and then we will name their creation after their family dog.” Stacy said the tavern will not be a restaurant but will have really good bar food. “We are still working on the menu, but I think we’ll have a few salads and soups with the gourmet hot dogs. I just want the food to be really great.”
“I’m so excited, but very nervous, too. I’ve been meeting all kinds of different people. There is so much more to opening this than I ever thought about. It’s definitely a learning process. I heard people are excited about it. I want it to be a warm, friendly place where people feel comfortable.” The patio area will be open next spring/summer.
Mary Ellen Given, executive director of Roscoe Village, said the village is very excited to see Huck’s Tavern open. “I think Stacy will be a tremendous partner for the village and we can’t wait until they open. I always enjoy being around Stacy – she is such a wonderful positive energy.”
